Migrate 5 cookbooks for Project Pythia

In #7676 we started community migration work. This task has additional components that we need to deliver. Our long-term goal is to migrate all cookbooks, this task tracks 5 of them.

Definition of done

• 5 additional cookbooks have been migrated to the new actions

I started tackling this, and learned more since the refinement of the task. Here's what I've learned:

1. We can move more config into myst.yml. This means we can remove _gallery_info.yml: feat: pull metadata from myst.yml ProjectPythia/cookbook-gallery#31
2. I think we can remove most of the cookbook configuration in favour of simpler workflows. I'm exploring settings simple flags via the repo settings. I've pushed these changes to my fork.
3. We can probably simplify the indirection with PR previews. I'm currently working on this.
