Enable compression in the REST API

Feature or Problem Description

The registry REST API does not currently support compression of the request/response payloads.

Proposed Solution

Enable the Quarkus feature for http compression:

• https://quarkus.io/guides/http-reference#http-compression

Note that the typescript REST client could then also have compression enabled. See:
