Tracking this one privately until the fix ships. The fix is #34, due in 6.8.3.
Short version: on a default install, a lead capture form submission against a contact that already exists does not keep contact details the form has no input for. "Overwrite Option" in Field Options governs it, and it ships unticked. #34 changes the form endpoints so the outcome no longer depends on that setting, with a filter for anyone who wants the old behaviour back.
