Testing with image snapshots

Now that we have a "working" api - we should be testing against rendered image snapshots - especially for things like annotations.

These won't be able to be run on regular GHA as they will require a GPU to render properly, but we can run them on the self-hosted GHA runner that currently renders the docs.

Unsure what packages would be useful for this but as I haven't yet looked into it.
