[General]: Add SIST Logo and Branding to Documentation #44

To finalise the SIST v1.0.0 release candidate, we should add the new SIST logos and branding to the project documentation.

This should include:

• Adding the SIST logo and branding to the README.md.
• Adding the appropriate logo and branding to the documentation built and hosted on Read the Docs.
• Ensuring the branding is displayed correctly in both light and dark modes, where applicable.

Additional Information

This will ensure the documentation is consistent with the new SIST v1.0.0 branding and ready for the release.
