Based on uxarray leaning heavily on UGRID, it may be beneficial to directly support UGRID versus using uxarray to convert UGRID -> SCRIP (or Exodus). TBH, probably just supporting ESMF too (https://github.com/ClimateGlobalChange/tempestextremes/issues/37) would be useful for CESM modelers.
