Fix Read the Docs build by replacing deprecated sphinx-bootstrap-theme with sphinx-book-theme

- Replace sphinx-bootstrap-theme with sphinx-book-theme in docs/doc_requirements.txt
- Update docs/conf.py to use sphinx_book_theme with proper configuration
- Update setup.py extras_require to match documentation requirements
- Resolves RTD build failure caused by deprecated use_2to3 in sphinx-bootstrap-theme
