Swap the defaults values of enabled

Currently, the default is `enabled=True` for many things, in particular dependencies like mysql, OpenSearch, etc. This is convenient for the demo, but we should rather aim at having sensible defaults for prod. 

Do not forget to reflect the changes in all the `values.yaml` (CI, run_demo, etc) and in the helm legacy command
