docs: rewrite README - remove benchmark bragging, focus on usage

- Lead with what it does and how to use it
- Explain routing in plain terms
- Compare honestly with LiteLLM
- Show ensemble feature as differentiator
- Remove tier accuracy tables and benchmark score lists
- Update package.json description to usage-focused
