UX: Update Featured Collections Hyrax

Lori and Emily will work on selecting new images for the featured collections - OER and newer project center. Once selected, they will provide to Derek and have him update the Hyrax homepage

• Emily will start a doc with suggested featured collections with images and descriptions and then share with Lori
• Derek will work on updating the homepage once he has a free week - mid-September?
