[BUG] Jenkins version in the role needs to be updated #837
Description
Current Jenkins version that we provide in the role is 1+ year old. This has a lot of warnings and errors from security issues to deprecated features that are not working. If we try to use demo_all use case this will be shown there and in any other new use case that consumes this role.
Manually changing the version using a var doesn't seem to work since configuration schemas have also change and need to be updated
Definition of done:
Have the Jenkins role use the latest LTS version 2.492.2
