it seems to me that it's exceeding the mtu limit which is 1500. But I don't know how to configure ettercap to respect this limit.

I ran sudo ip link set dev eth0 mtu 3000 and the error stopped, but it is not the ideal or definitive solution. I remember seeing error of 7000 byte packet

This is not a Ettercap limit, but a limit by the OS enforced by the libnet library which Ettercap uses to craft network packets.
I rather wonder why the packets are getting that big or if the original packets are actually arriving that big, which might be a network supporting jumbo frames but the machine etttercap is running is still set to the default MTU.

This was the reason I've been asking for more details in the form of debug logfile paired with a packet capture file.

But without this information, we can just do guesswork. Hence asking one last time:
