Implement a statistics endpoint to inspect server performance

We want to be able to inspect server performance on a default endpoint, maybe something like this:

greitspitz --enable-statistics
curl http://127.0.0.1:1090/statistics

Preferably in such a format that it's easy to ingest it in an APM service.
