docs: Add migration docs from 0.7.5 -> 1.0.0

react-native-ama will now be namespaced packages to be installed when users want additional accessibility functionality from ama we need to communicate this change clearly as well as add a migration guide to our docs so users can easily upgrade to the latest version.
