Improve the docker-compose setup.

• Provide access to various different data sources out of the box.
  • Postgres
  • Redis
  • MongoDB
  • MySQL
• DynamoDB (either setup for a cloud connection or localstack).
• Add user-friendly commands to run only a specific container.
