I lack the hardware from the description, but can I still try this out purely with emulation?

Yes, you can run it with a few emulators, including Altirra and AppleWin. The easiest way is using Fujinet VirtualMachine, which is an image for VirtualBox or QEMU, with the emulators and Fujinet installed:
