[Testing]: Improve test coverage for OIDC and authentication changes

As requested by Jamie in https://github.com/finos/git-proxy/pull/906, we should improve test coverage for all the authentication enhancements for that PR and also subsequent ones (https://github.com/finos/git-proxy/pull/963, https://github.com/finos/git-proxy/pull/967).
