Using appName does not seem to have any effect on the paf file.

Update. I had a typo in my command Dounce:appName instead of Dounce.appName
The readme\help output still seems incorrect.

I'm assuming appName should set the name of the application inside the paf file.
But it does not
mvn ounce:application ounce:project -Dounce:appName="test"
paf file:

But how it should work isn't clear.
Both appDir and appName options say "Specifies the directory where to create the paf file" in the help output.
