Add support for pydantic 2

Pydantic is at version 2.7.1. Manifest-ml expects < 2.0. Can this be updated?

Pretty much everything else I am using works with the latest version of Pydantic.

I tried to force it to install with uv. But it didn't work.

Here is a pyproject.toml file that allows installing the latest version of pydantic that may be used as a drop in replacement for the same file in this project. After that do the following to install the dependencies:
uv sync --all-extras
