I suppose to do a custom logic for choosing appropriate drivers for dGPUs and x86 / arm iGPUs, but decided to just stick with auto.

Comment to gallium-drivers:

List of gallium drivers to build. If this is set to auto all drivers applicable to the target OS/architecture will be built.

Comment to vulkan-drivers:

List of vulkan drivers to build. If this is set to auto all drivers applicable to the target OS/architecture will be built

So I think let's meson.build logic do its best.
