Remove/Discourage using MinIO as a S3 Storage Option #12036

With Minio move to no longer support an Open Source model, we should encourage people to a) not use it for any new deployments (if they don't want to pay for a license) and b) move away from it as they no longer will provide maintenance (if they cannot afford a paid license).

Necessary changes:

  • Remove from docs/guides (maybe keep a note that it used to work as an S3 target)
  • Highlight current tools usable to build an S3 compatible storage (maybe include paid and free options?)
  • Remove and/or replace the MinIO container from/in docker compose
  • Update dataverse-ansible to not use MinIO by default
