Do you have any suggestions on how to create a version of this for a specific category or selection of topics?

For example moving from pure random article generation to a list of topics / categories such as soccer / leagues / teams / etc.

I don't know the tech side, but if it helps you come up with ideas, Wikipedia actually has portals.

Main categories are:
General reference
Culture and the arts
Geography and places
Health and fitness
History and events
Human activities
Mathematics and logic
Natural and physical sciences
People and self
Philosophy and thinking
Religion and belief systems
Society and social sciences
Technology and applied sciences

But each of those has subportals as well. Even just being able to choose one of the main branches of portals would be great though.
