Refactor using Gatsby to speed up page load, especially image assets

Time to update the portfolio, make it more detailed about the technologies used for each project. Gatsby will help with the rendering of the gifs which can be really slow on first load due to the file size. Also look into something other than image for that effect may help (not iframe but something like that)
