<li>Onion (finely chopped): 1 medium</li>
<li>Tomato (pureed): 2 medium</li>
<li>Ginger-garlic paste: 1 tsp</li>
<li>Turmeric powder: 1/2 tsp</li>
<li>Red chili powder: 1 tsp</li>
<li>Coriander powder: 1 tsp</li>
<li>Garam masala: 1/2 tsp</li>
<li>Salt: To taste</li>
<li>Oil: 2 tbsp</li>
<li>Water: 1-1.5 cups (to adjust consistency)</li>
<li>Fresh coriander leaves: For garnish</li>

<li>Rice: 1/2 cup</li>
<li>Split yellow moong dal: 1/4 cup</li>
<li>Spinach (finely chopped): 1 cup</li>
<li>Methi (fenugreek leaves): 1/2 cup</li>
<li>Green peas: 1/4 cup</li>
<li>Green chilies (chopped): 1-2</li>
<li>Ginger (grated): 1 tsp</li>
<li>Turmeric powder: 1/2 tsp</li>
<li>Cumin seeds: 1 tsp</li>
<li>Asafoetida (Hing): A pinch</li>
<li>Ghee or oil: 2 tbsp</li>
<li>Salt: To taste</li>
<li>Water: 3-4 cups</li>

<li><strong style="font-weight: bold;font-size: 25px;">Process:</strong>
<ul>
<li>Wash the rice and moong dal thoroughly and soak for 15 minutes.</li>

<li>Add spinach, methi leaves, and peas. Cook for 2-3 minutes.</li>
<li>Add soaked rice and dal, turmeric powder, salt, and water. Mix well.</li>
<li>Close the lid and pressure cook for 3-4 whistles on medium heat.</li>
<li>Once the pressure releases, stir the khichdi gently and adjust the consistency if needed by adding water.</li>
<li>Serve hot with ghee, pickle, or yogurt.</li>
