When I try to rename in Spanish, I get this error, but if I rename in English, it works fine.

How can I change the encoding system?

I use deluge 2.2.0 and filebottools 2.0.5

both deluge and filebottool use utf-8 but the characters are being entered using your system encoding. Unfortunately I'm not really familiar with encoding wrangling, and the only thing I can think to do is change your system encoding to UTF-8.

You could set LANG=C.UTF-8 in the environment before calling filebot if it's not set correctly already.

@diegomtnz could set the system locale to LANG=es_ES.UTF-8 as well which would then be inherited down the process tree on restart.
