[Enhancement]: Privacy mode for Langfuse traces

What features would you like to see added?

Addition of privacy mode that will allow to send traces to Langfuse but without any prompts and completions included in the traces (OpenRouter offers similar functionality) to protect the privacy of the user, but still allow visibility on general usage and costs.
