No problem with that. Just install NetworkManager, remove ifupdown or /etc/network/interfaces, and of course do not attempt to set/change network settings via dietpi-config afterwards. DietPi is Debian, so you can use any network stack available on Debian, or install anything else as you want. dietpi-config is an offer, no enforcement.
