Provide a "light" deployment

Provide a "light" deployment of ANMS with a subset of the normal subsystem containers.

This would exclude frontend friendly containers like the opensearch and grafana, and diagnostic ones like adminer. Possibly also exclude postgres server from the deployment.

This ticket should also include enhancing the checkout-test fixture to verify more detailed state of the user-agent-visible HTTP interface. Currently many of the tests end at receiving an HTTP "200" status.

To provide podman v1.0.6 on RHEL-9 compatibility, the compose --profile option cannot be used with a single compose config file. So it seems like multiple compose files will need to be kept in the repository.

As part of this, we should evaluate whether adminer should be removed. At a minimum it should be removed from the 'light' deployment, though we should consider removing it from all standard deployments in favor of discrete directions on how to add-in optional development tools (ie: a debug-compose.yml) and a reminder that postgres can also be managed with any standard PSQL tool, including Adminer and PgAdmin.
