veda-routes deployment variables not unpacked properly

In this deployment, the stage variable resolved to the full dict of environment variables, which caused a validation error and blocked deployment.

We either need to set the env var secret in MCP test to use VEDA_STAGE or remove the prefix setting which looks for VEDA_ https://github.com/NASA-IMPACT/veda-routes/blob/dev/config.py#L110. I've set the secret to have STAGE and and VEDA_STAGE set for now to unblock you @ividito

Isn't this error stating that it looked for stage and couldn't find it in the dictionary? 🤔
