Update to influxdb 2

Updating to influxdb 2 has several advantages:
1. Influxdb is no longer supported 
2. The Influxdb python client for 1 has been deprecated leading to compatibility issues with newer versions of python and packages
3. Being able to upgrade to a newer version would allow us to save a couple hundred megabytes off the worker image
4. It might be faster?
