Update the Electron package dependencies

Many of them are out of date, some by a few major versions!

It would be great to get these into good order and start keeping them up to date

I'd be happy to do a pass on this. I audited the composer packages in the electron repo and also found an abandoned package. It looks like a rename more than anything:
