Can't install Nix on macOS 12.7.6

Trying to install nix use sh <(curl --proto '=https' --tlsv1.2 -L https://nixos.org/nix/install) as pr. https://nixos.org/download/#nix-install-macos

Sadly the minimum macOS version supported by nixpkgs 25.11 (which we build against) is macOS 14 due to lower versions being EOL. A better error message in the installer is in the backlog for now.
