Add "Prometheus" metrics exporter #12
Description
Right now the AI Gateway supports only ElasticSearch. We need to add Postgres & Prometheus also as the telemetry plugins.
This should be added as a new telemetry plugin and must have sufficient tests etc. This should work in a similar way as the ElasticSearch plugin. Also, we should allow for multiple telemetry plugins to be configured simultaneously.
