Update Schema coverage tests to use `@hyperjump/json-schema-coverage/vitest`

Align with the schema testing processes of the OAS repo and leverage the `@hyperjump/json-schema-coverage/vitest`. Update the appropriate actions, clean up redundant files etc.

`dev` --> `v1.0-dev`
`dev` --> `v1.1-dev`
`dev` --> `main`
