Title metadata corruption after saving PDFs with accents.

Expected Behavior

After saving the PDF, the metadata should not get corrupted or replaced by strange symbols.

Actual Behavior

The title metadata gets corrupted if it has accents after saving the PDF.

Reproduction Steps

First editing on Windows:

Windows1.mp4

Checking again for the saved content, corrupted title metadata:

Windows2.mp4

Opening the edited file on Linux, the editor shows strange characters in the title metadata after saving it again:

I can confirm that the problem exists, issue 81762 for your problem.
The problem is reproduced on Document Server.
