docs: update ROTE-API documentation with complete response structure

- Add all missing fields in response examples (type, archived, pin, editor, updatedAt, etc.)
- Include author, attachments, and reactions objects in all response examples
- Add detailed field descriptions for attachments and reactions
- Add complete example with attachments and reactions in note detail response
- Ensure documentation matches backend implementation
