docs(planning): clarify Phase 0.1 audit denominator (10 workflows)

Second-pass review caught that the Phase 0.1 check-off line said "no
other workflow still on v3" without naming the audit scope. The
parenthetical "audited all 10 workflows in .github/workflows/ — none of
the other 9 still on v3" makes the denominator explicit so a future
reader doesn't have to grep to know what "every other workflow" means.

Pure prose clarification. No code change.
