Document why someone should choose REST vs JSON data source types

The docs describe a "REST" data source that you can use to fetch JSON data from an endpoint. It also describe a "JSON" data source that seems to fundamentally do the same thing. It never clearly distinguishes these two or explains why I should use one or the other.
