🧪 Add Tests for sietch `scaffold`

sietch scaffold is used to generate template files:

What needs to be done

• Unit tests: Cover all functions related to the scaffold command.

• End-to-end (E2E) tests: Test different scenarios, such as:

  • Listing a large number of files (e.g., 100 files)
  • Handling multiple folders with similar or identical names
  • Any other edge cases to ensure scaffold behaves correctly ( the more edge cases the better)

This issue aims to improve the test coverage and reliability of the scaffold functionality.
