Can not use a variable containing a quote

I try to make a condition following a text contained in a field.
If the text has no quote, all is Ok.
But if the text contain one, I have the error message : "Failed: missing ) after argument list"

Below my script (short version to show the issue) :

As you can see, the text contain a quote.

If I realise the same test with a text without a quote, all is Ok.

Perhaps there is another way to call the variable ?
