[BUG] Can't install Shop on the iOS simulator when mini's folder path has spaces

🐛 Bug Description

📋 Steps to Reproduce

Create a mini inside a folder with spaces. Like:
/Users/scott/Documents/SHOP MINI/price-point/
when trying to open the mini in the simulator, CLI fails with this error:

:heavy_multiplication_x: Command failed: xcrun simctl install A2849FF5-DEBE-49C9-87E5-670CBE44621F /Users/scott/Documents/SHOP MINI/price-point/.minis-cache/Shop.app
An error was encountered processing the command (domain=NSPOSIXErrorDomain, code=2):
Simulator device failed to install the application.
Unhandled error domain NSPOSIXErrorDomain, code 2
Underlying error (domain=NSPOSIXErrorDomain, code=2):

🤔 Expected Behavior

we should support paths with spaces
