Yes, you can change the color used for redacting text in Stirling-PDF, including switching from black to white. To do this, click the color palette icon in the toolbar and select your preferred color before applying a new redaction. For existing redactions, click the redacted area, then use the color palette icon that appears to choose a new color. This can be done at any time, even after the redaction is applied. Supported options include black, white, red, green, blue, and custom colors docs website.

it is only possible in the automatic modus - not in the manual modus. And we need the manual modus for redacting.
