[Feature] Add monitoring stack

Description
In order to verify that operations run smoothly, a monitoring stack should be added and integrated into the existing services. This may include log aggregation and metrics collection. Special consideration should be taken for Minio as it is the most critical component. Alerting should be set up to be notified about critical disk space.
