Allow icon customisation

Let the user decide to inject certian Icon-Libraries like Lucide, react-icons, etc.

Actually we are doing this better than I though

So we actually use icon component instead of for example <MenuItem icon={"edit"}>Edit</MenuItem>.

This mean we should support custom icons right out of the box, I will leave this until I get to test it.
