Reenable ingest tests

Ingest tests were temporarily disable because they have been failing since [this commit](https://github.com/Unstructured-IO/unstructured-inference/commit/0f0c2be07c673615217b214937f50a091676a8aa), which was six months ago as of when this issue was created.
