chore: ingest logging is too noisy

Some users complain about too noisy ingest outputs:

It looks that some of the logger emit entries could have a different level set (DEBUG instead of INFO).

Additionally, there's no clear way to silence the pipeline by setting e.g. an env var (INGEST_LOG_LEVEL seems to not work).
