Disable telemetry/tracking

Your documentation says

To opt out of this data collection, you can set the environment variable SCARF_NO_ANALYTICS=true before running any commands that call Unstructured Serverless API services.

However, it does not mention that you also need to set DO_NOT_TRACK also as you can see here

Looks like this could be closed.

The tracking only runs if neither are true. Setting both is not necessary.
