 There's probably not much we can do for asset codes in the wild that use extended ASCII or UTF-8. A subsequent proposal could set aside a prefix for a more standardized and flexible format. (For example, you may want to set aside a few bytes for a currency symbol e.g. $, €, ¥, or 💩.)
