macOS installation issues

From a recent troubleshooting session with a new macOS user:
- Anaconda continues to cause issues not seen with miniforge. First it needed to be manually configured to have `osx-arm64` among its `subdirs`, then there was a cryptic SSL error when trying to pip install. We ended up switching to miniforge.
- `numpy` 1.22 was installed, but we need 1.23. This will be addressed by #344.
