Dark Mode issues with Outlook Email Text

If a user submits a conversation or responds to a open coversation by email, using Outlook (New Desktop, iOS Mobile or Web) black text is still displayed as black in Dark Mode, making the email impossible to read.

I assume it's CSS that needs to be nerfed somehow, as Gmail responses appear to work as expected

Not sure where to start looking to resolve currently.
